Mama Always Said: Cook Once, Eat Twice

My mother is not the cook in my house. In fact, the number of things that she does cook can easily be counted on one hand:

  1. Tuna Noodle Casserole
  2. Chicken and Rice Casserole
  3. Cereal with Milk
  4. Carry-out
Thank goodness my father knows what he's doing in the kitchen otherwise my culinary experiences growing up would have been quite stunted.

The one thing that my mother DOES know about cooking, however, is something that I have been putting into practice in my own kitchen lately thanks to my menu planning efforts. Her mantra has always been, "Cook once, eat twice".

I pick my meals by flipping through my cookbook and pick out things that sound good. Most recipes usually make about 4 servings to start with, so if you half it you will get to two meals out of cooking one time. Which for me means dinner one night and a lunch a few days later (I usually like to give myself a few days away from a meal before I eat it again. Unless it's a meal that is based around potatoes, in which case I will eat it for every meal until there is nothing left. I love me some potatoes).

Do you cook once and eat twice? If you have a family, how would this work out for you? Do you just cook for the family everyday?
